Take a big bite of the bokit, an iconic sandwich from Guadeloupe that will transport you to the heart of the Caribbean!

The bokit is a fried sandwich, originating from Guadeloupe, that has won the hearts (and stomachs!) of Caribbean people. Its thin, crispy dough, made from flour, water, and salt, is fried until golden brown and puffed up. The bokit is then filled with a variety of savory ingredients, making this sandwich a complete and delicious meal.
Ingredients :
For the bokit dough:
500g of flour
1 sachet of baking powder
Water
Salt
Frying oil
For the topping (suggestions):
Flaked and seasoned cod
Grilled or shredded chicken
Ham, cheese
Raw vegetables (salad, tomatoes, onions)
For the sauces
Preparation :
The dough: Mix the flour, yeast, and salt. Gradually add water to form a smooth, elastic dough. Let the dough rest for 30 minutes.
Shaping: Divide the dough into small balls. Roll out each ball thinly on a floured work surface, forming a disc.
Cooking: Heat the frying oil in a deep pan. Dip the dough discs into the hot oil and fry them on each side until golden brown and puffed up.
Filling: Drain the bokits on paper towels. Cut the bokits in half and fill them with the ingredients of your choice.
Tips and tricks:
Crispy pastry: For an even crispier pastry, you can add a little rum or beer to the dough.
A variety of toppings: Let your imagination run wild with the toppings! Cod, chicken, raw vegetables, Ma'am Caribbean sauces... the possibilities are endless.
Serving suggestion: Serve the bokits warm, accompanied by a green salad or sweet potato fries.
